To be honest, I don't even know how to properly title this deliciousness: Chai Vanilla Muffins? Chai latte muffins? Chai Vanilla & Cinnamon Muffins? Actually, it doesn't matter, because the most important thing is that they taste great, have a light vanilla & cinnamon note, which just fits perfectly with the classic chai milk tea flavor. In addition, it's really super easy to prepare and really quickly touched, just something different than the 1,000th chocolate muffins, which is why I'm a big fan of this flavor.
The ingredients given here are enough for 12 muffins, who wants to make more can simply extrapolate the recipe, only the pinch of salt remains a pinch of salt, then you do not need two pinches.
This brings us to the ingredients:
- 150 ml milk, lukewarm
- Chai latte vanilla-cinnamon, soluble milk tea drink (1 packet of 25g), e.g. from Krueger, but any other will do.
- 50 g butter
- 120 g sugar
- 2 eggs
- 220 g flour
- 1 heaped teaspoon baking powder
- 1 packet vanilla sugar
- 1 pinch salt
And that brings us to the preparation
- Preheat the oven to 170° C (340°F) top & bottom heat.
- We heat the milk and prepare the chai latte. I took the one from Krueger, because the taste simply appeals to me. On the package it says that you should mix it with water, but we still take the specified 150ml milk for it. The milk should only be lukewarm, if it is too hot, the egg curdles early in the dough which we must prevent in any case! Instant Chai-Tea can be used from whatever brand you prefer.
- We put the butter, sugar and vanilla sugar in a bowl and mix everything well.
- Then we add the two eggs and mix them in well.
- We put the flour in a bowl, the baking powder on top and also the salt and mix it a bit with a spoon.
- Into the bowl with the butter and egg mixture, we now add a generous sip of the chai tea, followed by 2-3 tablespoons of the flour mixture. We repeat this alternately until the chai tea and flour are completely incorporated into the batter.
- We prepare a muffin pan and fill the paper cups 2/3 full.
- The muffins are now baked for 17-20 minutes, it depends a little on your oven.
- Afterwards they can be eaten, or you can decorate them with chocolate icing, sprinkles, Salted Caramel Fudge or whatever you like.
It's a rather simple and basic recipe, but the chai vanilla cinnamon flavor comes through nicely without being too overbearing. A welcome change in the often already somewhat monotonous flavor world of muffins!
