Quarkkeulchen were a frequent leftover meal in the former DDR, because you could still wonderfully process the jacket potatoes from the day before. Today, the recipe has grown up and is often prepared independently. Why? Because the taste is simply wonderful, has a certain freshness and the preparation is really easy.
Just the combination of potatoes and quark, the squeeze of lemon and the light sweetness gives this dish something irresistible. If you like, you can also refine the recipe, from chocolate chips to raisins, everything is conceivable here.
Let's get to the ingredients:
- 250g jacket potatoes (usually leftovers from the day before).
- 250g quark
- 50g sugar
- 2 eggs
- 2 tablespoon (approx. 50g) flour
- 1 teaspoon baking powder
- some oil or clarified butter for the pan
OPTIONAL:
- Raisins or chocolate chips, or whatever you think is appropriate.
Since the dish gets by with really few ingredients, it is of course also really quickly prepared, so it is perfect as a quick lunch or dinner, if there is only little time.
Preparation:
- Peel the skin off the jacket potatoes and mash them or press them through a potato ricer.
- Put the potatoes in a bowl, add the curd cheese and mix well.
- Next, add the eggs and stir them well into the mixture as well.
- Now add the sugar and lemon juice and mix well again.
- The last ingredients are due - add flour and baking powder to the mixture and stir in.
- We heat some oil or clarified butter in the pan and put there about 1.5cm thick dough patties in it, about palm size. These are baked from both sides golden-yellow.
Who wants to refine the dough further simply raisins or chocolate chips with pure, for a delicious vanilla note you can add a packet of vanilla sugar, vanilla extract (1TL) or the market of a pod with.
Can be served simply sprinkled with sugar, cinnamon & sugar, but also with applesauce or stewed fruit. They are also really delicious with vanilla sauce!
